Why butter has its own calculator

Butter is the one ingredient measured in a unit no other country uses. American recipes call for sticks, British ones for grams, and Australian ones for cups — and butter is solid, so you cannot pour it into a measuring jug to check.

Salted or unsalted?

Recipes almost always assume unsalted, because the amount of salt in salted butter varies by brand. If you only have salted butter, reduce the added salt by about ¼ teaspoon per stick (113 g).

Softened, melted, browned

  • Softened means it dents under a finger but holds its shape — around 18°C. Essential for creaming.
  • Melted butter still weighs the same but behaves like oil in a batter, giving a denser crumb.
  • Browned butter loses 15–20% of its weight as water evaporates, so weigh it after browning if the recipe is precise.
